Kedgeree

IMG_0988 Ingredients for 2 people.
Half a cup of basmati rice pre-cooked.
One hard boiled egg, chopped.
Tablespoonful of chopped onion.
One smoked haddock cooked in microwave for 2 minutes.
Curry powder to taste, about a level teaspoonful.
Half a cup of frozen peas already thawed.
Two teaspoonfuls of vegetable oil and one of butter.

Method.
Heat oil and butter in non stick frying pan and cook onion until translucent. Add curry powder and stir in. Flake the fish and add with all other ingredients and heat through.

Our family favourite is to serve with mango chutney.

Masala Omelette

Ingredients for one person, two eggs, finely sliced coriander stalks, diced hot red chilli to taste. Mix all together and fry in lightly oiled non stick pan. Serve on a morning roll. (In India they also might include diced red onion, chopped ginger and diced seedless tomato.) Waitrose sell frozen diced red chilli in sachets. Predictable strength is good compared to variable strength of the fresh product.

Great Idea Club Sandwich

IMG_0619It’s the idea, not the content of the sandwich. I saw this in the Rocket Cafe in Morningside and it really works well. After toasting only two slices of bread, they have cut one of the slices as if they were making melba toast, then used each thin slice in the sandwich. Look again at the picture. A great idea!

Katie’s Strawberry Milk Shake

You will need
a large handful of raspberries
a large handful of strawberries
a squirt of strawberry dessert sauce
200ml of milk
2 scoops of vanilla ice cream
Method
1. Put all your ingredients into a blender.
2. Blend until smooth.
3. Taste and add more milk to taste.

For a healthier version replace the ice cream with 4-5 tablespoonfuls of vanilla yogurt and the dessert sauce with honey.

Katie’s Omelette

You will need
1 egg
a splash of milk
a pinch of salt
pepper
toppings such as ham and cheese
Method
1. Whisk the egg with the milk, salt and pepper.
2. Heat your nonstick pan with a little oil.
3. While you wait, grate the cheese and cut up the ham into small squares.
4. Use a fish slice to gently push from the edge of the omelette to the middle, creating texture.
5. Sprinkle on the toppings.
6. Wait 30 seconds and fold in half.
7. Wait another 30 seconds before lifting your omelette out of the pan using the fish slice.
